Impossible Chicken Pot Pie

Remember those TV dinner pot pies Mom fixed when you were a kid? Why is it that no matter how many times you burned your mouth on the first bite, you never had the patience to let it cool?

Stuff You Need

  • 2 cups cooked, cut up chicken
  • 1 1/2 cups frozen peas and carrots, thawed, drained
  • 1/4 cup chopped mushrooms
  • 1/4 cup chopped onion
  • 4 eggs
  • 1 1/3 cups milk
  • 3/4 cup Bisquick
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper


Putting It Together
Preheat the oven to 400F and grease a 10-inch pie plate. Add the chicken, peas, carrots, 'shrooms and onion to the pie plate and mix 'em up.

Put the other ingredients into a blender and mix on high 15 seconds. Pour over the chicken and veggies in the pie plate.

Place into oven and bake approximately 30-35 minutes. Test with a knife inserted into center. Allow to cool before serving. And don't forget to blow on the first bite.

Impossible Buttermilk Pie

Stuff You Need

  • 1 1/2 cups granulated sugar
  • 1 cup buttermilk
  • 1/2 cup Bisquick
  • 1/3 cup butter or margarine, melted
  • 1 teaspoon vanilla extract
  • 3 eggs


Putting It Together
Preheat the ol' hot box to 350F and grease a 9-inch pie plate. Add all ingredients to a blender and mix on high for 30 seconds (or beat in a bowl with a hand mixer on high for one minute).

Pour into prepared pie plate and put into oven for approximately 30 minutes - until the clean-knife test works.

Impossible Turkey and Stuffing Pie

This is a great recipe for Thanksgiving leftover.

Stuff You Need

  • 2 cups turkey, cooked and diced
  • 1/2 teaspoon seasoned salt
  • 1 cup prepared turkey stuffing
  • 1/4 cup green onion, with tops, sliced
  • 1/2 cup green peas, cooked
  • 1 cup milk
  • 2 eggs
  • 1/2 cup Bisquick


Putting It Together
Preheat your hotbox to 400F and grease a 9-inch pie plate.

Place turkey evenly in pie plate and sprinkle with seasoned salt. Place stuffing, in small pieces, over top of turkey. Top off with green onion and green peas.

Place remaining ingredients in a blender and give 'em a whirl, about 15 seconds, until smooth. Pour blender contents into pie plate.

Put it into your preheated oven and bake 30-35 minutes, until the pie passes the knife test. Let cool five minutes before serving.

Impossible Brownie Pie

Stuff You Need

  • 4 eggs
  • 1/4 cup butter, melted
  • 4 (1-oz.) squares semisweet chocolate, melted
  • 1/2 cup brown sugar
  • 1/2 cup Bisquick
  • 1/2 cup granulated sugar


Putting It Together
Preheat your oven to 350F and grease a 9-inch pie pan.

Combine eggs, melted butter and melted chocolate in a large mixing bowl (let the butter and chocolate cool a little before combining with eggs). Using an elecric mixer, mix until smooth (about 30 seconds on medium speed).

Add Bisquick and the two sugars, and mix for another two minutes. Then pour into pie pan. (Note: If you like nuts, you can sprinkle them over the top at this point.)

Pop into the oven and back 35 minutes, or until your Impossible Brownie Pie passes the knife test. Cool before serving.

Impossible Lasagna Pie

Yes, it's an impossible lasagna "pie."

Stuff You Need

  • 1/3 cup ricotta cheese
  • 3 tablespoons grated Parmesan cheese
  • 1 pound cooked, drained ground beef
  • 1 cup shredded mozzarella cheese
  • 1/2 cup spaghetti sauce
  • 1/2 teaspoon salt
  • 1/2 cup Bisquick
  • 1 cup milk
  • 2 large eggs


Putting It Together
Preheat your oven to 400F and grease a 9-inch pie plate.

Spread the ricotta in the bottom of the pie plate and sprinkle the Parmesan over the ricotta. Stir together beef, 1/2 cup of mozzarella, 1/2 cup spaghetti sauce and salt, then spoon evenly over the cheeses in the pie plate.

Blend Bisquick, milk and large eggs and pour into pie plate. Put it into the oven for 30-35 minutes until your pie passes the knife test.

Sprinkle the remaining cheese over top and put back into the oven just until cheese on top melts. Allow to cool for five minutes before serving. Serve with a bowl of heated spaghetti sauce that can be spooned over top.

Impossible Cheesecake II

This one includes a hint of lemon imparted by zest.

Stuff You Need

  • 1/4 cup sugar
  • 1/2 cup Bisquick
  • 2 eggs
  • 2 (8-ounce) packages cream cheese
  • 2 teaspoons vanilla
  • 1/2 teaspoon lemon zest


Putting It Together
Preheat your oven to 350F and grease a pie plate.

Add all ingredients to a blender and blend on high speed for three minutes. You'll have to occasionally stop the blender in order to stir.

Pour into the prepared pie plate and pop into the oven. Bake about 30 minutes, until the center of the cheesecake is dry and the cheesecake appears puffed up a bit. Be careful not to overcook or the cheesecake will be very dry.

Refrigerate before serving, preferably at least three hours.

Impossible Ham Quiche

Stuff You Need

  • 1/2 pound fresh mushrooms, sliced
  • 2 tablespoons butter or margarine, melted
  • 4 eggs
  • 8 ounces sour cream
  • 1/2 cup grated parmesan cheese
  • 1/4 cup all-purpose flour
  • 1 teaspoon onion powder
  • 6 to 8 drops hot sauce
  • 8 ounces shredded monterey jack cheese
  • 1/2 cup chopped cooked ham


Putting It Together
Put mushrooms and butter into medium skillet and saute until 'shrooms are lightly browned; drain.

Add next seven ingredients to your blender and zip it until ingredients are well-blended.

Combine blender mixture, mushrooms, cheese, and ham, and pour into a greased 10-inch quiche dish.

Bake at 350F for 45 minutes or until set. Quiche should be puffed and golden brown. Let stand 10 minutes before serving.

Impossible Taco Pie

This Impossible Taco Pie recipe makes six servings. Or two servings if you've invited me over for dinner.

Stuff You Need

  • 1/2 pound ground beef
  • 1/2 cup onion, chopped
  • 1 envelope (1.25 ounces) taco seasoning mix
  • 1 1/4 cups milk
  • 3/4 cup Bisquick
  • 3 eggs
  • 2 tomatoes
  • 1 cup shredded cheddar cheese
  • Non-stick vegetable spray


Putting It Together
Preheat your oven to 400F and spray a pie pan with non-stick cooking spray.

Cook ground beef with onion until beef is browned; drain. Then stir the taco seasoning into the beef, and place beef mixture into pie pan.

Beat together the milk, Bisquick and eggs until smooth, then pour into pie pan. Pop it into the oven for 25 minutes.

After 25 minutes, remove and top pie with tomato slices and cheese. Put back into the oven and continue baking until your pie passes the knife test (approximately 8-10 minutes longer). Allow to cool for about five minutes before serving.

Impossible Bacon Pie

Here's a recipe for a breakfast pie. But why limit it to breakfast? Is there any time of day when bacon isn't appropriate? No. The answer is no.

Stuff You Need

  • 1 pound bacon
  • 1 can chopped green chiles
  • 1 cup grated Monterey jack cheese
  • 1 1/2 cups milk
  • 1 cup Bisquick baking mix
  • 6 ounces sour cream
  • 3 eggs
  • Salt and pepper to taste


Putting It Together
Preheat your oven to 350 degrees.

Crisp the bacon, then drain it and crumble it. Put the crumbled bacon into the bottom of a greased, 11x7 baking dish. Put the onion and cheese over the top of the crumbled bacon.

Place the remaining ingredients in a blender and give 'em a 1-minute whirl. Pour over the top of ingredients in the baking dish.

Place into your oven for approximately 35-45 minutes, until the pie passes the knife test.

Impossible Pina Colada Pie

Yo, ho, ho and a quarter-cup of rum!

Stuff You Need

  • 1/4 cup milk
  • 1/4 cup rum
  • 2 tablespoons margarine, softened
  • 4 eggs
  • 1 (15-oz.) can cream of coconut
  • 1 (8-oz.) can crushed pineapple, well-drained
  • 2 cups flaked coconut
  • 1/2 cup Bisquick


Putting It Together
Preheat your oven to 350F and grease a 10 x 1 1/2-inch pie plate.

Add all ingredients except 1 cup of the coconut flakes to a blender and blend on high for 30 seconds (if you don't have a blender, go 1 minute on high with a hand-held electric mixer). Pour into pie plate.

Sprinkle remaining coconut over the top and put into the over. Bake approximately 40-45 minutes, until your pie passes the knife test.

Serve garnished with sliced pineapple and whipped cream. Refrigerate the pie until it's all gone (which shouldn't take long).
